oven roasted green asparagus with wild garlic butter

500g green asparagus
50g vegan butter, softened
6 leaves fresh wild garlic
olive oil
salt and pepper
I N S T R U C T I O N S
start by preheating the oven to 220°C/fan 200°C
break off any tough, white bottoms of the asparagus and transfer it into an oven dish
lightly brush your asparagus with olive oil and season it with salt and pepper to taste before transferring into the oven and bake for around 10 minutes
meanwhile transfer your soft butter in to a bowl, add your finely chopped wild garlic and gently fold it in using a fork until well incorporated and the wild garlic is evenly spread throughout the butter - add salt and pepper to taste
after 10 minutes of baking your asparagus, add the wild garlic butter on top and bake it all together for another 3-5 minutes until your asparagus is fork tender
transfer everything onto your serving dish and make sure to drizzle all leftover butter from your oven dish on to your plated asparagus.
