bread salad with grilled nectarines, olives and tomatoes
I N G R E D I E N T S 4 servings
1 stale ciabatta (250-300g)
2 ripe nectarines
700g sweet cherry tomatoes
200g black kalamata olives
juice and zest of 1/2 lemon
good olive oil
4 twigs of fresh thyme
salt and pepper to taste
I N S T R U C T I O N S
start by ripping apart your ciabatta into bite size pieces and fry the bread in a pan with olive oil until lightly browned
cut your kalamata olives in half and remove the pits, quarter the cherry tomatoes
cut your nectarines in wedges, brush with a little olive oil, place them in a very hot griddle frying pan and sear the wedges for about 2 minutes on each side.
toss all your prepped ingredients in a salad bowl, add the lemon juice, thyme and a generous drizzle of good olive oil
season with salt, pepper and lemon zest to taste and let it sit for a little while so the ciabatta can soak up the juices before serving
