grilled peach gazpacho
I N G R E D I E N T S 4 servings
450g tomatoes
150g onions
2 ripe peaches
1 cucumber
1 clove of garlic
1 teaspoon harissa paste (depending on your spice preferences)
1 table spoon vegan butter
olive oil
salt and pepper
I N S T R U C T I O N S
cut the peaches and sauté them in butter until they are properly browned
chop the tomatoes, onions, and cucumbers. peel the garlic cloves
puree everything together with the sautéed peaches
gradually add harissa to the mixture, adjusting to taste to avoid making it too spicy
add a bit of olive oil, salt, and pepper according to your preference
chill the mixture before serving
I like to serve it in a glass with an ice cube.
