pumpkin granola
I N G R E D I E N T S 1 baking sheet
150g pumpkin puree *
200g oats
100g pumpkin seeds
100g pecans, chopped
50g pistachios, chopped
100g dried cranberries
50ml maple syrup
50ml coconut oil
1 tsp cinnamon
1/2 tsp cardamom
1 tsp tonka bean
A pinch of salt
I N S T R U C T I O N S
preheat the oven to 180 degrees celsius and line a baking sheet with parchment paper.
mix the oats with all the other dry ingredients, including the spices
in a small saucepan, melt the coconut oil and maple syrup over low heat, stirring constantly, and then add the pumpkin puree
add the liquid to the oat mixture and mix everything well
spread the granola flat on the baking sheet and bake in the preheated oven for about 10 minutes
after 10 minutes, stir it well and bake for an additional 10-15 minutes - during the second baking time, keep an eye on the granola to ensure it doesn't burn
allow it to cool completely and then transfer it to an airtight container.
* for the pumpkin puree, just chop and bake your pumpkin of choice (I use hokkaido or butter nut) in a little coconut oil until soft and puree.
