soba noodles in coriander coconut milk

400ml coconut milk
100ml water
15g coriander
juice and zest of 1 lime
1 tablespoon nutritional yeast
1 tablespoon green thai curry paste
1 tablespoon coconut oil
crispy chili oil to taste
salt to taste
I N S T R U C T I O N S
start by transferring your coconut milk, juice and zest of the lime, water, nutritional yeast and coriander to a blender and blend everything until smooth
heat up a pan, add your coconut oil and green curry paste, let the paste sauté until fragrant and add the coconut milk mixture, let simmer on low
meanwhile cook your soba noodles following the instruction on the package
once your soba noodles are cooked, transfer to your bowl, add the coconut milk and top with your crispy chili oil of choice.
